3 Ayurvedic Muffin Recipes
a muffin for each dosha
I know the comforts of having a sweet snack throughout the day, and muffins are one of my top favorite forms of carbohydrates.
However, after listening to my body, I realized all my favorite snack foods were wreaking havoc on my gut health, spiking my blood sugar and contributing to my skin issues. Basically, the more bread, grains, and sugars I ate, the worse I felt. I began researching healthier alternatives to my favorite foods.
I have discovered that totally cutting out my favorite foods is not necessary (nor possible), and I have been figuring out new ways to eat the foods I love while still healing my body. Enjoy these muffins for breakfast, as an afternoon snack, or anytime you are craving something sweet and comforting.
Ingredients you will need for the base:
2 cups of coconut flour
1 cup of arrowroot flour
1 tsp. of baking soda
1 dash of pink Himalayan salt
5 organic, cage-free eggs
1/2 cup of agave syrup
1/2 cup of monk fruit sugar
1/2 cup of melted coconut oil
3 cups of sweetened coconut Milk
You will also need:
2 regular muffin pans
30 muffin liners
Non-stick spray (I use coconut oil spray)
4 mixing bowls
First, combine the dry ingredients into a large mixing bowl and mix until thoroughly combined. Then add the eggs, sweeteners, coconut oil and coconut milk. Mix thoroughly.
Separate this mixture into three equal portions into smaller mixing bowls.
1. BERRY beautiful MUFFINS for pitta
Calm inflammation and cool pitta's heat with sweet berries high in antioxidants.
In mixture #1, add:
2 handfuls of blueberries
2 handfuls of raspberries
2. CINNAMON apple MUFFINS for kapha
Stimulate and invigorate kapha's slow energy with warming cinnamon and fresh apples.
For mixture #2, you will need:
2 tsp. of powdered cinnamon
1 apple (Fuji, Gala, or Honeycrisp works well)
First, peel the apple and then remove the core. Then finely chop or grate the apple and add both ingredients to the mixture.
3. NUTTY CARROT Muffins for Vata
Ground Vata's air-like energy with carrots (this root vegetable will root you in reality), and steady Vata with healthy fats from walnuts.
For mixture #3, you will need:
2 handfuls of pecans or walnuts
5 baby carrots
After washing the carrots, finely chop or grate them and add both ingredients to the mixture.
After adding the muffin cups into the pans and spraying them, pour the three mixtures separately into the pans, not combining them. Cook at 350 degrees for 45 minutes or until cooked thoroughly. Use a toothpick to check their progress.
Enjoy these for breakfast, dessert, or just as a snack. These treats are so nutritious, you won't feel guilty about indulging!
